- ~4 pounds of skirt steak
- 5-6 limes (NOT Mexican / Key limes... normal limes)
- 2-3 lemons
- 1/2 a bunch of cilantro, chopped, stems and all
- 1/2 a white onion
- 1/2 a little bottle of pomegranate juice
- splash of balsamic vinegar
- 4 cloves of garlic, chopped
- 1-2 cups or so of orange juice
Juice your lemons and limes, keep like half of the peels and slice them.
Chop onion, cilantro, and garlic.
Add pomegranate juice, mix everything together and add just enough OJ to make enough marinade.
Add steak, marinade for at least 12 hours.
Sear the hell out of it over the hottest mesquite fire you can get, but leave the middle nice and bloody.
